You wake slowly. Coffee is already on. The light over the Val d’Orcia is the kind of light you’ve seen in paintings and never quite believed was real.
Breakfast on the terrace. A walk through the vines. Back to the kitchen for a lesson, or to your room for a book, or to the piazza for nothing in particular.
Lunch is long. Two hours, maybe three. There is wine, and then there is water, and then there is more wine. Nobody is in a hurry.
The afternoon is yours. Nap. Swim. Walk. Read. The schedule bends around you, not the other way around.
Dinner at sunset. Candlelight by the time the first course arrives. Athena pours a wine, tells the story of the vintage, and the room slows down to listen. The second wine is a Riserva. The third, tonight, is a library vintage from 2007 , the first one you’ve ever tasted.
By the time the figs and the vin santo arrive, it’s midnight. Nobody has checked their phone.
This is a day at the retreat.
I arrived exhausted. I left changed. Not because I learned about wine, but because for seven days I was allowed to taste everything slowly. I haven't rushed a meal since I got home.
My wife and I have been to every five-star hotel you've heard of. This was different. The luxury wasn't the villa. It was Athena actually knowing our names by the second morning.
I'm a professional musician. I've been to a lot of retreats that promised transformation. This is the only one that delivered.


Athena Tergis Bollag has spent twenty years making Brunello in Montalcino. Before that, she spent twenty on stage as a principal fiddler with Riverdance. She is a senior-certified Tony Robbins leader. A meditation practitioner. A cook who learned from Tuscan grandmothers and a host who knows your name before you arrive.
She does not retreat from the world when she hosts a retreat. She invites you deeper into yours.
